CMC for Yogurt
CMC for Yogurt used is a commonly used food additive, has the functions of thickening, stabilizing, emulsifying and improving taste. Hondo Sodium CMC can significantly improve the texture and stability of yogurt, it is one of the important additives in yogurt processing.

 

CMC for Milk
Hondo CMC for Milk used is a water-soluble polymer compound. Sodium CMC is mainly used as a functional ingredient such as thickener, stabilizer, emulsifier, suspending agent and water retaining agent, and plays an important role in the production process of milk and related dairy products industries.

Functions of Food Grade CMC
 

Thickening and Taste Improvement Effect
Applied as a food additive 466, grade CMC can produce higher viscosity at low concentrations, and endow smooth texture to food. The pseudo-plasticity effect of CMC brings refresh and strong taste. Its good suspension stabillizing characters can make food keep uniformity on odor, concentration, and taste.

 

Structure Loosen Effect
Good rheological and gel stable characteristics of food-grade CMC can prevent dehydration and shrinkage of food, can improve the expansivity rate of food. Reversibility between viscosity and temperature of CMC is good for the increase of food expansivity rate.

 

Suspending Effect
Sodium carboxymethyI cellulose can be used as a suspending agent in different food. Have a good suspension bearing capacity. If mixing with agar, guar gum, etc, will get good compatibleness and tenacity strengthening the effect.

 

Water Retention Effect
Food grade CMC (thickener e466) has good hydrophile and rehydration properties. Thickener e466 can reduce dehydration and shrinkage of food, and prolong storage time. Water-holding property is applied to prevent water evaporation or non-crystallization of sugar.

 

Binding Effect
Food grade CMC (stabilizer e466) can improve the performance of starch food [prevent starch ageing, and dehydration), and control mash viscosity. Better effects if stabiliser 466 can mix with cmc food ingredient, including emulsifer, konjac gum, spermine diphosphate hexahydrate, so sodium carboxymethyl cellulose is widely used in food such as noodles, bread, frozen dessert, etc.

 

Recommended Dosage of Food Grade CMC
 
CMC For Beveragers

CMC has good acid resistance, emulsification and thermal stability, and high transparency in aqueous solution. When used in liquid milk, soy milk, fruit juice milk, peanut milk, lactic acid, fruit acid and other acid beverage, it can make the solution stable and taste refreshing and can adapt to commonly used sterilization processes like UHT and Pasteurized. The recommended dosage is 0.3-0.5%.

 

CMC used as dispersant and excipient in ice cream, can not only improve the expansion rate but also prevent the formation of ice crystal, making ice cream taste fine and smooth. The recommended dosage is 0.25-0.35%.

The thickening, suspension and salt resistance functions of CMC make condiments such as soy sauce and jam, congee and pulp drinks stable and uniform, and can improve the texture. The recommended dosage is 0.3-0.8%.

 

The unique shaping and bonding properties of CMC can increase toughness, smooth surface, improve taste and reduce crushing rate in instant noodles, biscuits and frozen pastry. The recommended dosage is 0.25-0.4%.

 

The recommended dosage of food grade CMC used in yellow rice wine, beer, and other wine products is 0.5-5‰.

 

The recommended dosage in soy milk, bread, sesame paste, ham, sausage, moon cake and other cake filling products is 3-8‰.
